Chick Pea Basil Burger

Here's an easy-to-make vegetarian burger inspired by this POST , if you have some readymade soup, this makes for a perfect quick-fix dinner! Ingredients Garbanzos/Chick peas - 1 can Medium potato - 1 cooked and peeled Fresh basil - 20 leaves, finely chopped Bread crumbs - 1 tbsp for the mix and 1/4 cup for coating the pattie Salt to taste Fresh crused pepper Optional - 2 tsp of any masala powder like garam masala or red chili powder Drain the water out of the canned garbanzos and add them to a dish. To this, add the boiled potato and mash them up well (make sure it's not a complete paste, keep it coarse). Stir in 1 tbsp of crumbs and all other ingredients and mix well. In the mean time heat a flat griddle and spray some oil. Scoop up a handful of the potato mix, flatten them like a pattie, coat it on both sides with the bread crumbs and place them on the griddle. Flip over and spray a little more oil as required till both sides are browned and well done.

The 5-Minute Falafel Sandwich

Ingredients: Bread - 2 slices (I used whole wheat) Cheese - 1 slice ( Reduced Fat Pepper Jack ) Jalapeno Hummus (If you are using pepper jack cheese, you could do plain hummus!) Falafel - 2 (I used the frozen "heat&serve" falafel available in Costco ) Onions - cut into flat, wide 2" pieces - 5 pieces (or according to your taste) Tomato slices - optional Butter or Cooking oil spray Heat tava and spray some oil and place the slices of bread. When it's toasted on one side, flip it over. Place the cheese on one slice and spread the hummus over the other. Microwave the falafel for a minute or less, remove and slightly press and place them over the cheese slice and arrange the onion slices. Now place the other slice and press the sandwich well on both sides and serve! You can serve this with ketchup or any other tangy sauce. Other tangy/sour options would be some capers/olives. If you like Feta cheese, that would be the perfect choice for this sandwich. I...

Pizza on a bun....

 Post # 8 Posted by: Nitika Anu and I were talking one day and I told her that I tried making pizza for the first time ever and that it was like THE best pizza ever (I will save the recipe for another post). She suggested a twist to my recipe and her 'recipe' made it to my Quick 101 dinner list!! Ingredients : Hamburger buns, fresh mushrooms, cherry tomatoes, pesto sauce, oregano flakes, cheese, salt and pepper, Extra Virgin Olive Oil (EVOO) Optional : cilantro, green chilies 1) Pre-heat oven in bake mode at 475 degF 2) Prepare the mushrooms (can add cherry tomatoes) - in a bowl add mushrooms and tomatoes and EVOO and toss. Then put it on a baking sheet and bake. It sizzles. 3) T ake buns, put butter and toast them on tava. 4) On the toasted bread, spread pesto, put the grilled mushrooms, tomatoes (fresh or grilled), sprinkle oregano and cheese and bake at 375 till cheese melts. 6) You can repeat the same with other cheese mixes...shredded cheese, green chilies, dhania...
