Pesto Pastry Pizzettes

I've blogged about this appetizer in my Christmas dinner post . We found this recipe on Sips and Spoonfuls , Archana's contribution to the dinner and I must say she has mastered this one! It was my turn to give it a try so here goes... we had already attacked the plate before I took a pic!! Pesto Pastry Pizettes Adapted from Sips and Spoonfulls by Sukaina Puff Pastry sheets - 1 box (this yields 18 pizzettes and you can manage about at least 4 or 5 more if you knead and roll out the scrap dough!) Pesto - the original recipe (click on Sukaina's link above) calls for a special red pesto. I resorted to an easier method, I used Costco's pesto and mixed in some Tom Yum paste (WHATT?? yes, I did!!!) and 1/2 a tsp of Sriracha. I think you can add any red chili paste. As for the proportions, follow your taste buds! Chili-Cheese Toast

  Post # 19 Here's a simple snack for a lazy Sunday afternoon. This one definitely qualifies as a quick, easy-to-make appetizer ! Ingredients: Bread - 8 slices, cut each slice into two halves Green chilis - 4, finely chopped Grated cheese - 1.5 cups (monterey jack would be good) Onion - 1 medium, finely chopped Green capsicum - 1 medium, finely chopped Cilantro - 2-4 tsbp Mix ingredients 2-6 in a bowl. Preheat the oven at 350 degF. Place the bread slices on a baking tray and toast till they light-medium brown (10-15mins but keep checking in between) in color. Remove and spread a layer of the cheese mix over the slices and bake again till the cheese melts over (should be done in 5-10 mins).

Chip 'n Salsa

 Post # 10 Posted by: Anu Serving Size: 6-8 Ingredients: Canned black beans - 1 can Canned corn kernels - 1 can Onion - 1, big (finely chopped) Cherry tomatoes - 1/2 pound (cut each tomato into 8 small pieces) Fresh Jalapeno - 2 (finely chopped) EVOO - 3 tbsp Lemon juice - 3 tbsp Salt, pepper (to taste) Fresh cilantro for garnish ing Empty the canned beans and corn in a colander, rinse, drain and add to a mixing bowl. Add the remaining ingredients and toss. The salsa is better served chilled!! Notes: This can be served with scoop chips An Indian (chaat) version of the salsa - fill the chips with black beans, finely chopped onions and tomatoes. Top with sweet and sour chutney, finely chopped cilantro and sprinkle some sev and chaat masala. A tsp of curd or sour cream won't hurt either!!
